Perino Tomatoes, Avocado and Pine nut salad

- 1 punnet Perino Snacking Tomatoes
- 1/4 cup Pine Nuts
- 1 Avocado
- 1 Zucchini
- 1/4 cup Black Olives
- 1/4 cup Green Olives
- 50 g Rocket
- Apple Cider Vinegar
- Olive Oil
- Sea salt and freshly ground pepper, to taste
- Toast the pine nuts in a frying pan for a few minutes until they turn slightly brown and crunchy.
- Chop the Perino tomatoes in half lengthways, and the zucchini and avocado into slices.
- Toss all the ingredients together with the rocket and olives.
- Drizzle with apple cider vinegar and olive oil, add salt and pepper to taste.
