Perino, Avocado and Ricotta Toast

Didn’t think you could put Perino’s on toast? We’ve even infiltrated your breakfast!

Ingredients

  • 100g Perino Snacking Tomatoes, sliced
  • 100g Perino Gold Snacking Tomatoes, sliced
  • 6 slices grain bread of choice
  • 1 cup ricotta cheese
  • ½ cup fresh basil
  • 1 avocado, sliced
  • 1 red pepper, finely sliced
  • sea salt and freshly ground pepper, to taste

Method

  1. Toast bread until golden.
  2. Finely slice half of the fresh basil and combine with the ricotta cheese. Season with salt and pepper.
  3. Spread the ricotta mix on the toast, and layer on sliced avocado and top with Perino Tomatoes.
  4. Garnish with remainder of basil and sliced chilli.
  5. Sprinkle with salt and pepper to serve.
