Perino, Avocado and Ricotta Toast

Didn’t think you could put Perino’s on toast? We’ve even infiltrated your breakfast!
Ingredients
- 100g Perino Snacking Tomatoes, sliced
- 100g Perino Gold Snacking Tomatoes, sliced
- 6 slices grain bread of choice
- 1 cup ricotta cheese
- ½ cup fresh basil
- 1 avocado, sliced
- 1 red pepper, finely sliced
- sea salt and freshly ground pepper, to taste
Method
- Toast bread until golden.
- Finely slice half of the fresh basil and combine with the ricotta cheese. Season with salt and pepper.
- Spread the ricotta mix on the toast, and layer on sliced avocado and top with Perino Tomatoes.
- Garnish with remainder of basil and sliced chilli.
- Sprinkle with salt and pepper to serve.
