Perino Bruschetta

We make this delicious bruschetta extra sweet and bursting with flavour! This twist on everyone’s favourite Italian starter is sure to impress anyone lucky enough to get some.
Ingredients
- 100 g Perino Snacking Tomatoes
- 100 g Perino Gold Snacking Tomatoes
- 2 Large Truss Tomatoes
- 2 cloves of garlic
- 2 tbsp olive oil
- 1 loaf Ciabatta bread
- 1/2 red onion
- Handful of basil leaves
- 1 tsp seeded mustard
- 1 tsp sugar
- 50 ml white vinegar
- 1 tbsp chili oil
- Sea salt and freshly ground pepper, to taste
- Parmesan cheese, freshly grated
Method
- Crush garlic and mix with oil. Allow to stand for 30 minutes to infuse.
- Slice bread and paint both sides with the garlic oil.
- Slice Perino tomatoes lengthwise and place into a large bowl.
- Chop the Truss tomatoes into small pieces. Dice onion and finely slice basil into strips and add to the bowl.
- In a small bowl mix vinegar and sugar together with mustard (it should taste sweet! The amount of sugar added varies, depending upon the sweetness of the tomatoes).
- Add dressing to tomato mix and stir through.
- Add chilli oil to taste, season with salt and pepper and adjust flavour after tasting. Grill the garlic bread.

- Sprinkle lightly with parmesan cheese, and a drizzle of chilli oil (for further spice if required).
